Recipe: Peach and Raspberry Poptart

Filling:
- 2 Peaches, peeled and sliced
- 6 oz Raspberries, washed and dried 
- 1/2 tablespoon Cornstarch
- 2 tablespoons Maple Syrup
- 1 teaspoon Vanilla Extract

Dough:
- 1 cup All-Purpose Flour
- 1/2 tablespoon Baking Powder
- 1 tablespoon Avocado Oil
- 1/3 cup Greek Yogurt
- 2 tablespoons Monkfruit Sweetener or Sugar
- 1 teaspoon Vanilla Extract

Icing:
- 1 cup Powdered Sugar
- 1 tablespoon of Filling (from the prepared mixture)
- 1-2 tablespoons Water

Instructions:
1. In a skillet or pot, combine the sliced peaches, raspberries, maple syrup, cornstarch, and vanilla extract. Cook until thickened, about 5 minutes.
2. Allow filling to slightly cool. Puree with an immersion blender or transfer to a blender. Let it fully cool.
3. Preheat the oven to 350 degrees Fahrenheit.
4. In a mixing bowl, combine the flour and baking powder.
5. Add Greek yogurt, sweetener, vanilla, and avocado oil to the flour mixture, mixing until it forms a dough.
6. Flour your surface and roll the dough into a large rectangle. Cut it into 6 rectangles.
7. Place a tablespoon of the filling in the center of each rectangle (reserving a tablespoon or more of filling for icing)
8. Top each with another rectangle of dough and seal the edges with a fork. Repeat with all the others.
9. Bake for 12-15 minutes or until golden brown.
10. While they cool, make the icing by mixing powdered sugar, a tablespoon of filling, and enough water to achieve desired consistency.
11. Spread some icing on top of each pop tart and enjoy!
