5 Ingredients or Less: Vegan Pesto
Peter piper picked a peck of pesto! Well, maybe a little more than a peck. The quest to making the perfect pesto is a challenging one. Simply Gum team member and pesto aficionado Emanuel has dedicated many sleepless nights to finding the perfect ratio of basil, olive oil, nuts, and spices. In this blog post, Emanuel shares his famous vegan pesto recipe that none of us at Simply Gum HQ can get enough of. You'll Need:

2 ½ cups of fresh basil

¼ cup of toasted nuts

2 cloves of garlic

½ cup of olive oil

2 Tablespoons of lemon juice

Salt, to taste (Ok, 6 ingredients-- but does salt really count?)
Instructions:
In a blender, blend together the olive oil, garlic, and toasted nuts. If you prefer your pesto thick, you can use the pulse setting instead. Then, add the basil, lemon juice, and salt to taste. Keep the pesto refrigerated in an air-tight container until served.
